Galleria Midobaru is a new concept hotel in the city of Beppu. The hotel is popular for its unique architecture that gives visitors a sense of the landscape of Beppu, the contemporary art displayed throughout the building, and the private hot spring baths in each room.
Yet, there is one more attraction visitors love at Galleria Midobaru, and that is the attached restaurant, The Peak. It offers a menu that makes the most of Beppu’s unique ingredients in every way. Today, I’ll introduce some of the carefully selected ingredients used at The Peak!
Kin-Un Pork
First, let’s start with Kin-Un pork, a brand of pork raised at the Fukuda Farm in Nakatsu City, Oita Prefecture. This pork is highly sought after for its fine and tender meat. One of the characteristics of Kinun Pork is that it does not become tough even as it cools. It is also said to be a healthy meat due to its high percentage of oleic acid, an unsaturated fatty acid. The meat is very juicy and has a refined taste with strong umami and sweetness.
Wild Game
Gibier meat or wild game has gradually gained popularity in the past few years, and The Peak offers a selection of dishes featuring high quality gibier meat directly from the gibier specialty wholesaler, Chinzeiya. The meat from wild boar and deer raised in the rich nature of Oita is healthy and has a clean taste.
Oita Kanmuri Jidori Chicken
The Oita Kanmuri Jidori or Crowned Chicken is a top-class local breed that is a point of Oita pride. Created over the course of four years by experts at the Oita Prefecture Livestock Experiment Station, it possesses tender meat of the highest quality with a high content of inosinic acid, the flavor component of chicken.
Honma-Mon or Genuine Organic Produce
In Usuki City, Oita Prefecture, agriculture is thriving, and organic vegetables are an important part of local farmers’ work. The organic vegetables grown with Usuki Dream Compost, a chemical-free mixture composed of roughly 80% grass and 20% pig manure, are certified as Honma-Mon Produce. The Peak also uses these Honma-Mon vegetables in its dishes to offer guests a true taste of Oita terroir.
Himeshima Shrimp
Himeshima is located at the western end of the Seto Inland Sea. Blessed with rich nature and a mild climate, Himeshima is an island with a long history that is said to have been mentioned in the Kojiki, a collection of stories and myths about Japan’s earliest days. The tiger prawns cultivated on Himeshima are considered to be of the highest quality and are characterized by supreme freshness and plumpness.
Kunisaki Oysters
Kunisaki Oyster is a premium brand oyster cultivated in Kunisaki City, Oita Prefecture. It is a top-quality oyster with a pleasant sweetness that is also clean and refreshing, which means you can eat as many as you want! Although it is only available seasonally, Kunisaki Oyster are a gem that you should enjoy at least once if you have the chance.
